Five Dollar Dinners: Burritos

Many of us eat Mexican food all the time, but few people (around here at least) actually cook it at home.  Burritos are about the simplest thing you can make, but they can be endlessly customized, so you can produce something that all your picky family will eat.  Here's one take on the classic (vegetarian) burrito:

Vegetarian Burritos (serves 4)

Flour tortillas ($1 for four)
Canned refried beans ($1 for one can sometimes less)
Cheese ($1 for four ounces)
Salsa ($.50 for four TBS)
Lettuce or cabbage ($.50 or less for four ounces)
Olives ($.50 for half can)
Sour cream ($.50 for four TBS)

Warm beans, dice veggies, shread cheese, and warm tortillas in a damp towel in the microwave.  Not only is this meal simple, simple, simple to make, but it is warm and satisfying as well.  Perfect for a weekend night because it's ready in fifteen minutes flat.
