With a load of yellow summer squash from the farmers market, and mountains of radishes in our garden, I was very happy to run across
this recipe. It marinates all the components of the salad except the lettuce, and the result is something so fresh and tasty. I also added a green apple for crunch and sweetness. The whole family, including the tiny child, ate it up with great gusto. Later this summer it will be a good way of using those millions of
zucchini that appear around July or August.
